Breakfast – the most important meal of the day

If your house is like mine, we rotate through the same few breakfasts. They are good healthy one in general, combinations of oatmeal, eggs, granola, yogurt, homemade muffins or granola bars, fruit and cheese.  But it’s easy to slip into a rut, and so I went looking for some new ideas and I thought I would share here.

Petit Vegetable Frittatas  This is brilliant. Mini muffin-like frittatas that use any combination of favourite veggies, can be made ahead and kept in the fridge, heat up quickly and are portable.  Paired with fruit, it’s a perfect grab and go breakfast.

Breakfast quinoa. This sounds like a great alternative to oatmeal. I’d probably add a bit more fruit and serve topped with a bit of yogurt and some chopped nuts.

Fruit Pizzas. These are things we make at home for a fun snack, but I have never tried these for breakfast. Our version uses a lightly baked tortilla as a crust, covered with cream cheese and topped with different kinds of fruit. This version looks a little more substantial, and I bet the goat’s cheese would be wonderful.    

Make ahead breakfast melts. The Pioneer Woman has some great recipes. This one would definitely appeal to the bacon and egg lovers in the crowd.

Yogurt popsicles. Great for warmer weather and a fun way to get some great nutrition into kids.

Breakfast burritos. I always mean to do these more often. My kids love them. I assemble them the morning of, but there are lots of recipes for make ahead versions which can be reheated in the morning.

Banana Oat Smoothie. We love smoothies but I haven’t tried adding oats. I imagine these would be quite filling.
